Chicken Tortilla Soup

I feel like I may turn in to a cup o’ soup like Justin Timberlake in the hilarious SNL skit with all of the soup recipes that I’ve posted lately. It’s cold outside, and what better way to stay warm then with a bowl of piping hot soup? I think this is a recipe that you’ll enjoy as it’s quick, easy and relatively healthy.

Ingredients

  • 1 Onion, chopped
  • 1 clove Garlic, minced
  • 1 T. Olive Oil
  • 1 store-boughtRotisserie Chicken, shredded
  • 1 can Black Beans
  • 1 11oz. can Corn
  • 1 can Diced Tomatoes with Green Chiles
  • 32oz. Chicken Broth
  • 1 cup Thick & Chunky Salsa
  • 1 T. Cilantro, finely chopped
  • Tortilla Chips
  • Extra Sharp Cheddar Cheese

Preparation

1.  Sauté onion, and garlic with oil in a large pot until tender

2.  Combine chicken, black beans, corn, diced tomatoes, chicken broth and salsa. Cook until heated through

3.  Grate cheese, finely chop cilantro and crumble tortilla chips into bite size pieces

4.  Serve soup with cheddar cheese, cilantro and crumbled tortilla chips. The soup would also taste great with sliced avocado and a dollop of sour cream (we didn’t have any of those on hand)
